Cooking with Jill:
During this time it’s hard to find easy meals that feed everyone in the family, but this dish is sure to create a fancy feast out of the leftovers in your fridge. This Paella dish make 12 servings and you can make it so many different ways!
Ingredients:
2 Tbsps. Olive Oil
2 Tbsps. Salted Butter
2 1/2 Cups White Rice
1 Tbsp. Garlic
1 Chopped Medium Onion
1 Cup Diced Sweet Peppers
2 1/2 Cups Chopped Leftover Meat
4 Cups Flavored Stock (Same as your leftover meat)
1 tsp. Salt
1 tsp. Pepper
28 oz. Crushed Tomatoes
2 Cups Broccoli Florets
2 1/2 Cups Zucchini
2 Cups Water
(All vegetables were from previous meals earlier in the week or at the bottom of the freezer.)
First add 1 Tbsp. of Oil and 2 Tbsps. of butter to your deep pot or wok and brown your rice. This will give it a nice texture and allow it to soak up all the flavors.
Set your rice aside.
Then take the rest of your oil and toss in your chopped onion. Make sure every piece gets coated in oil and cook it until it’s barely opaque. Throw in your Garlic and sweet Peppers and Mix.
Add in your leftover meat, for this we used a beef roast we made a few nights ago.
Mix together and cover for a few minutes.
Take one cup of your broth (We used beef flavored since it paired with our beef roast) and pour it in, then add in salt and pepper and stir it up.
Add one more cup of your broth and your crushed tomatoes and mix again. Cover your pot and bring it up to a simmer.
Add the rice you set aside earlier, mix, and cover.
When it’s thickened up add another cup of broth, stir your ingredients, Cover your pot and wait for it to thicken up again. Pour in your final cup of broth and add your zucchini and broccoli. Mix in 2 cups of water.
Cover and Cook for 10 minutes.
